what can we do better after an inspection of a rival, we think
what can we do the best. We put our trademark in a very
special place. For us, conscientious judgement is important
rather than a commercial accounting. We improve ourselves,
we add an interpretation to our products. We sell traditional
products. We are very successful in Turkish coffee. The
formula for our coffee belongs to us. When it comes to tea,
we work with Beta Taç Yaprak. At the end of the six-month
trials, our current tea emerged. In Turkey, there is no place
producing Turkish delight without using food coloring. Also
we used it before. Then we decided not to use it. We have
found organic madder (rubia tinctorum) from abroad. There is
a serious price difference between food coloring and organic
madder. We did not reflect this on product prices. There
are no additives and glucose in our delight. We use natural
madder and water buffalo milk in our milk pudding (custard).
Every product we sell and our architecture has a character.
We also have patented products. We have developed a
new product. It’s called “Ala Sos” (Pretty Sauce). We serve
our baklava also with this sauce. We made tres leches cake
(trileçe) with this sauce. Its name is “Ala Trileçe”. We created
a new flavor by putting Turkish delight between Kadayif
(shredded wheat dessert with pistachio filling). It was ranked
as the first in the International Taste Institute (iTQi) located in
Belgium among the 420 products.
Instead of shopping malls, we prefer places with fast
circulation and pedestrian traffic. We have only one branch
in a shopping center. Our branches are generally located in
the squares. The places where people are busy are more
attractive to us.
The franchising system does not fit our products. All our
products are produced daily. When it runs out of time, 24
hours, we remove it from the sales booth. We distribute
it to our staff or to a charity. A franchising company does
not subsidize it in any way. We have another brand idea.
We want to give franchise in that brand. We currently have
solution partners in our two branches. We call this system
“partnerchising”.
Our branch in Taksim Square was not able to overcome
customer density. We opened the new branch to help the
Taksim branch. We said we’d keep a branch open 24 hours,
now they’re both open 24 hours. Each of our branches is
special.
We are planning to open our branch in Dubai in September.
It will be located in an important location of Dubai Mall.
We will also establish a production site. We will put it into
operation at the end of August. We will send the delight and
chocolate – dragées group from here. However, we will make
custard, cake, baklava, kadayif and kunafah there. A difficult
operation. But we believe we will succeed. We will realize the
growth abroad step by step. We get very serious offers. We’re
meeting large groups. If there is a strong partner from abroad,
we can’t argue with that.
We currently export to the Far East. In the last year, there has
been serious demand from the Far East. There was no such
demand before. Because the Far East customer hadn’t met
sugar. They especially consume Turkish delight and dragées.
But we say, charity begins at home. First of all, we are trying
to catch our own shops’ product needs. We work at a busy

Türkiye’de lokumu gıda boyası kullanmadan yapan yer
yok. Daha önce biz de kullanıyorduk. Sonra kullanmamaya
karar verdik. Yurtdışından organik kök boya bulduk. Gıda
boyasıyla organik kök boya arasında ciddi fiyat farkı var.
Bunu ürün fiyatlarına yansıtmadık. Lokumlarımızda hiçbir
katkı maddesi ve glikoz yok. Muhallebide de doğal kök
boya ve manda sütü kullanıyoruz. Sattığımız her ürünün ve
mimarimizin bir karakteri var. Bunun yanı sıra patenti bize
ait olan ürünlerimiz var. Yeni bir ürün geliştirdik. İsmi “Ala
Sos”. Baklavamızı bu sosla da servis ediyoruz. Bu sostan
trileçe yaptık. Onun da ismi “Ala Trileçe”. Kadayıfın arasına
lokum koyarak yeni bir lezzet yarattık. Belçika’daki Lezzet
Enstitüsü’nde 420 ürün arasında yenilikçi ürün olarak birinci
seçildi.
Alışveriş merkezleri (AVM) yerine, sirkülasyonu ve yaya trafiği
hızlı olan yerleri tercih ediyoruz. Bir tane AVM şubemiz var.
Şubelerimiz genel olarak meydanlarda yer alıyor. İnsanların
yoğun olduğu yerler bize daha cazip geliyor.
Franchising sistemi ürünlerimize uymuyor. Bütün ürünlerimiz
günlük olarak üretiliyor. 24 saati doldurduğunda tezgahtan
kaldırıyoruz. Ya personelimize ya da hayır kurumuna
dağıtıyoruz. Franchising olan bir firma bunu hiçbir şekilde
sübvanse etmez. Başka bir marka düşüncemiz var. O
markada franchising vermek istiyoruz. Şu an iki şubemizde
